Cheese & Herb Scuffins...Savoury Muffins with a twist!

Today we tackle a delicious little Scone/Muffin. You can use whatever cheese & herbs you fancy, its a super versatile recipe!

Gooey cheese and fresh herbs make for this delicious little anytime treat. Great for lunchboxes, tea time or even for breakfast. These are really nice when armed up a little a lathered with lashings of butter.
This one is so simple... its a chuck everything in a bowl and stir kind of recipe, so if you like a little lazy cooking, this one is for you!
Cheese & Herb Scuffins
Ingredients
This recipe makes:12 Scuffins
Total time: approximately 40min
Pre-heated oven 180 degrees celsius
2 1/2 cups cake flour
1/2 cup oil
3/4 cup milk
2T baking powder
1 pinch salt
1 T/spoon sugar
1 handful chopped herbs (we used parsley, dill, coriander & rosemary, finely chopped)
1 cup grated cheddar
100g feta (about 1/2 cup) crumbled.
Sprinkle with smoked paprika before baking
Any cheeses or herbs that you have on hand can be used.
Directions
Literally, throw all the ingredients in bowl, mix until combined (do not over mix) and spoon into a a greased muffin pan. Sprinkle with smoked paprika if you want to be snazzy.
Bake in a pre-heated oven for 30min +/-... they are ready when slightly browned on the sides and a toothpick comes clean when you insert it into the scuffin.
